Bean and Ham Salad Recipe
This recipe is based on the one given to me by my friend Leigh. I switched some quantities and mixed up some ingredients, but let me tell you its really yummy!
1 can of chickpeas drained and rinsed
1 can of black eyed peas drained and rinsed
1 package of cubed ham
1/2 green bell pepper, chopped
1/2 red bell pepper, chopped
1 1/4 Lite Italian dressing
2 tsp cumin
1 tbsp chili powder
1 tsp galic salt
Basically, you mix it all together in a large bowl and store it in the fridge. Its a cold salad and keeps for a couple days. In the original recipe, there was 2 cans of black eyed peas and cucubmers instead of ham. Both versions were quite tasty and colorful. Enjoy! ~jen~
